Our obsession with chocolate is a tad bit out of hand, so as you can imagine, when we received the Mast Brothers Chocolate Cookbook we were pretty excited to try out the recipes inside.
The Mast Brothers Chocolate Cookbook is 270 pages of chocolate heaven with delicious and innovative recipes such as Spiced Cocoa Butternut Squash Soup and Chocolate Cranberry Pork Tenderloin. The book goes in depth about Rick and Michael Mast’s experiences as they discovered more about the farming and origins of chocolate and its distinct flavour profiles around the world. Additionally, the book provides wonderful stories and details into their journey of becoming brilliant pastry chefs and chocolatiers in New York.
Here’s what we made from the book:
Chocolate, Maple & Pecan Cookies
These cookies were the perfect balance between crispy and soft. The crunch of the pecan pieces, sweetness of the chocolate chips along with the perfect compliment of maple sugar proved to be a cookie we’d definitely try again.
- 1/2 cup pecans
- 1 cup (2 sticks) unsalted butter, room temperature
- 1 3/4 cups maple sugar
- 2 eggs
- 1 1/4 cups all-purpose flour
- 1 tbsp. baking powder
- 1 tsp. baking soda
- 1 tsp. sea salt
- 10 oz. dark chocolate chips
Crunchy granola made with almonds and pecans and paired with dried cocoa, honey and the contrast of bitter cacao nibs. This granola is a scrumptious sweet treat for your morning that is incredibly versatile. We added pumpkin seeds, shredded coconut and some maple syrup to ours and served it as a yogurt parfait with strawberries and blueberries. Yum!

Marbled Cheesecake Brownies
Can’t decide between making a cheesecake or making brownies? Try marbled cheesecake brownies. These brownies give you that cheesecake taste your craving but cut down the time you need when you make a cheesecake. Go ahead and satisfy your chocolate and cheesecake needs with this delicious treat!
- 12 oz. dark chocolate, chopped
- 3/4 cup (1 1/2 sticks) unsalted butter
- 1 1/2 cups brown sugar
- Seeds from 1 vanilla bean
- 5 eggs
- 1/2 cup all-purpose flour
- 1 tsp. baking powder
- 1 tsp. sea salt
- 4 oz. cream cheese, whipped
