Maple-Bacon BeaverTail Donuts

Oh, Canada. A diverse land full of history, culture, tradition and some of the best sweet treats. We’ll never forget making snow-cooled taffy at maple sugar shacks in Quebec or the taste of fried dough shaped as a beaver’s tail covered in cinnamon and sugar at the Canadian National Exhibition.

We’re so proud to be Canadian and figured combining the flavours of our favourite Canadian treats into one and throwing in some bacon would basically be the best way to celebrate our country. Maple-bacon BeaverTail donuts are the perfect hand-held dessert to bring to the Canada Day BBQ.  They’re fluffy on the inside with a perfectly golden, crunchy exterior, dipped in a maple glaze and topped with a cinnamon powdered sugar with hints of salty bacon inside. There’s really nothing better. Here’s how to make ’em:

INGREDIENTS 

For the maple glaze*: 

  • 1/2 cup maple syrup
  • 1/4 cup unsalted butter
  • 1 cup confectioner’s sugar
  • 1 tbsp. maple extract

For the cinnamon powdered sugar: 

  • 1 1/2 tsp. cinnamon
  • 1/2 cup powdered sugar

For the maple-bacon donuts**: 

  • 2 cups all-purpose flour
  • 1 cup cooked bacon, chopped into bite-size pieces
  • 2 tbsp. sugar
  • 1 tbsp. baking powder
  • 1 tsp. salt
  • 5 tbsp. cold butter
  • 3/4 cup milk
  • 1 tbsp. maple extract
  • Vegetable oil
  • Candy thermometer (optional)

METHOD 

To make the glaze: 

  • Melt butter and maple syrup in a saucepan over medium heat, whisking occasionally.
  • Once the butter is melted, remove the pan from the heat and whisk in maple extract and powdered sugar
  • Set aside and let the maple glaze cool and thicken

To make the donuts: 

  • Add flour, sugar, salt and baking powder into a mixing bowl. Mix on low until combined
  • Cut in cold butter until the dough texture resembles course crumbs
  • With the mixer on low, slowly stream in milk and maple extract until combined
  • Fold in cooled, chopped bacon pieces and transfer dough to a floured surface
  • Knead the dough on the floured surface and work into a cohesive ball
  • Roll out the dough until 1/8″ thick. Using a glass or biscuit cutter, cut out rounds from the dough. Using an apple corer, or the end of a piping tip, cut out the centre hole from the round.
  • If you want to make the hole a bit wider, use a wooden spoon or your finger to spin the donut shape on your work surface
  • Once your dough is in a donut shape, heat the vegetable oil in a medium-sized saucepan over medium-high heat.
  • Use a candy thermometer to heat the oil to 350 F or insert the back end of a wooden spoon into the oil to see if bubbles form around the spoon.
  • While your oil is heating, mix together powdered sugar and cinnamon in a bowl and line a plate with paper towel for your donuts.
  • Once the oil is heated, slowly add 3-4 donuts. Monitor the temperature of your oil, making sure it stays consistent throughout cooking time – you may need to adjust your heat periodically
  • Cook your donuts for roughly 3-4 minutes. Flipping over once halfway through.
  • Using a slotted spoon, carefully transfer your donuts to the paper-towel lined plate and drain the excess oil and let them cool until they are easy to handle.
  • Dip the donut into the maple glaze you made earlier and dust a generous amount of cinnamon powdered sugar over each donut.
  • Serve them to your family and friends on Canada Day and try not to eat them all!
