Blood Velvet Cupcakes with Pretzel Ghosts

Ah, Halloween! The beloved time of year where we celebrate all things spooky and all things sweet. We’ve got just the Halloween treat for you to make with your kids this year.

We’re playing up the classic Red Velvet cake with these Blood Velvet Cupcakes topped with the most adorable Pretzel Ghosts, adding a salty flavour to this indulgent dessert.

Of course, we’re playing all of the cheesy Halloween-themed music to go along with it, including:

INGREDIENTS

For the Red Velvet Cupcakes:

  • 1/4 cup unsalted butter, softened at room temperature
  • 3/4 cup granulated sugar
  • 1 tsp. vanilla extract
  • 1 large egg
  • 2-3 tbsp. unsweetened cocoa powder
  • 2 tbsp. gel or powder food colouring (add more if necessary)
  • 1/2 cup buttermilk (or 1/2 cup milk + 1 tsp. white vinegar)
  • 1 cup + 2 tbsp. all-purpose flour
  • 1/2 tsp. baking soda
  • 1/2 tbsp. vinegar

For the Cream Cheese Frosting:

  • 250g Philadelphia cream cheese block
  • 250g softened butter
  • 350g sifted icing sugar
  • 1 tsp. vanilla extract
  • 3/4 cups milk powder (skim or full fat) (we actually left this out- and it turned out great!)

For the Ghost Pretzels:

  • Salted pretzels (depending on how many cupcakes you are making)
  • 1 cup white chocolate
  • Eyeball candies

METHOD

  • Melt the white chocolate in a microwave for 30 sec. intervals
  • Using 2 forks, carefully dip the pretzels in the chocolate, making sure it is completely covered
  • Place dipped pretzels onto a tray lined with parchment paper
  • Place 2 eyeball candies on the pretzels
  • Let the chocolate pretzels harden

For the “Blood” Topping:

  • Red melting chocolate wafers
  • Piping bag

METHOD

  • Melt red chocolate wafers in the microwave for 30 sec. intervals
  • Pour melted chocolate into a piping bag, snip off the end to leave a small hole
  • Pipe messy lines onto the cupcake to resemble blood
  • Top your cupcake with the pretzel ghost and ENJOY!
